Nom Nom Roots

One of my weekly favs with the addition of yam root vegetables, asparagus and olive oil cooked in the air fryer.

BUT–the yam tends to dehydrate in the fryer, while everything else has plenty of moisture and great texture.

Nix the yam next time.

Pro tip–the carrots need longer to cook than the asparagus.

So I cook the carrots with about a TBSP of olive oil for 10mins at 340 degrees and THEN add the trimmed asparagus for another 8-10mins.

Let sit and cool/soften in the fryer for another 5mins. Walla!
